Sometimes, the best ideas come when there is no food in the house and you need to get creative. I stare into my pantry at the end of the week and I wonder what I was thinking at the grocery store because there’s nothing in there. The kids lobby for pizza delivery, but I’m not ready to throw in the towel yet. That’s how sweet potatoes and ground turkey turned into Sweet Potato Nachos. I loved the combination of sweet and spicy and my family gobbled them up – even though they weren’t pizza. Also, I was able to make them 21 Day Fix friendly, which was a bonus. The best part is you can use what you have on hand and if you chop everything ahead of time, it makes of a quick, weeknight meal.

It’s so easy. Just bake the sweet potato chips, brown the meat and then add your toppings.

21 Day Fix nachos

Sweet Potato Nachos

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 4


  • 2 Sweet Potatoes Peeled and thinly sliced into chips
  • 1 tbl Coconut Oil
  • 2 tsp Cajun Seasoning
  • 1 lb Ground Turkey
  • 2 tbl Taco Seasoning

Toppings (Mix & Match)

  • 1/2 cup Shredded Cheese
  • 1 Green or Red Pepper - Diced
  • 1 Tomato - Diced
  • 1/4 cup Cilantro - chopped
  • 1 Jalapeno pepper - chopped
  • 1 Green Onion - Diced
  • 1/2 Avocado - diced
  • 1/4 cup Sour Cream


  1. Preheat oven to 400 degrees.

  2. In a large bowl, coat the sweet potato chips in oil and Cajun seasoning.

  3. Spread the seasoned sweet potato chips on a greased baking sheet and bake for 15-20 minutes. (Note: If your chips are really thin, watch them and pull them out before they get over-done. Mine took about 20 minutes.)

  4. While the chips are cooking, get out a large skillet and brown the turkey with the taco seasoning.  

  5. To assemble, spread out the sweet potato chips and then top with the turkey mixture, veggies, cilantro, cheese, sour cream, etc.

For the 21 Day Fix:

  1. Measure out a yellow container of the sweet potato chips and make them the base of your nachos. (It's kind of hard to measure in the container. I used about 1/4 of the potatoes)

  2. Top with one red container of the turkey.

  3. Fill half a green container with the veggies and add them to the turkey.

  4. Here's the hard part. You have to choose between cheese and avocado. I know. It's hard. Fill a blue container with either cheese or avocado and add it to your nachos.

  5. 21 Day Fix Container Counts: 1 yellow, 1 red, 1/2 green, 1 blue

Recipe Notes

If you want to prep this ahead of time, you can slice the sweet potatoes and chop all the veggies. Then, it will come together in a snap for a quick, weeknight meal.

I've also thrown in a can of diced tomatoes with chilies when I brown the turkey. That adds a little moisture and some additional heat. Also, if I wasn't doing the 21 Day Fix, I'd probably add black beans to this as well. That's beauty of it, you can experiment and make it your own. Have fun!
