So, I bought these cute 4 inch tortillas at the grocery store and they sat in the cabinet because I didn’t know what to do with them other than make adorable, tiny, slider tacos. Then, a lightbulb went off. Those cute little tortillas fit perfectly into a muffin tin.  What’s better than Sunday breakfast? One that’s 21 Day Fix friendly and won’t bust your clean eating streak.  Perfect! A few eggs, some chopped peppers, a jalapeno for some spice and a bit of cheese – and these egg cups were born. They’re so easy and they can be easily reheated for a quick, weekday breakfast.

I think these would also be great with feta cheese, fresh basil, tomatoes and spinach.

Easy 21 Day Fix Baked Egg Cups

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

  • 6 Tortillas (4 inch)
  • 4 eggs
  • Splash Milk
  • 1 jalapeno pepper - finely diced
  • 1/4 cup chopped peppers and onions
  • 1 TBL chopped chives
  • 1/2 Shredded cheese
  • salt and pepper to taste


  1. Spray half of a muffin tin with cooking spray and preheat the oven to 400 degrees.

  2. Microwave tortillas for about 15 seconds to get them warm and soft.

  3. Press the warm tortillas into the muffin tins to make cups for the eggs.

  4. Whisk together the eggs with a splash of milk or water. Mix in the veggies, chives and salt and pepper.

  5. Pour the egg mixture into each tortilla cup.

  6. Spray the edges of the tortillas with cooking spray

  7. Measure out a blue container of shredded cheese and top each egg cup.

  8. Bake uncovered for 15-18 minutes or until eggs are set.
