I started another round of the 21 Day Fix this week because that’s where I go when I need to get myself back on track. After the Holiday Cookie-Fest that was December, I definitely need to get myself back to my healthy habits. I love this program because the focus is on portion control and eating real food. Once you get the hang of the containers, the program is totally do-able and I always get results. I threw this salad together when I was looking for a quick lunch that didn’t involve any yellow containers. Those yellow containers always go too fast…
Anyway, it’s super easy and so delicious. The dressing is one of my favorites. I keep the salad dressing separate so I can use it all week. You could definitely add a red container of chicken to this if you wanted to make it more hearty. If you’re doing the 21 Day Sugar Detox, this recipe also works if you leave the honey out of the dressing. I’ve made it both ways and it’s great either way.
21 Day Fix: Apple Pecan Salad Recipe
Apple Vinaigrette Dressing
- 1/3 cup white balsamic vinegar
- 1/3 cup extra virgin olive oil
- 1/2 Granny Smith apple – diced with the skin on
- 2 tsp Dijon mustard
- 1 TBL honey
- salt and pepper to taste
Mix all of that together in a food processor or blender until it’s creamy. Store it in air tight container in the refrigerator for up to a week. I use a mason jar.
- Lettuce – I used Spring Mix 50/50 (1 green container)
- 1/2 Granny Smith Apple – diced
- 1/2 green container of Cucumber ribbons
- To make the cucumber ribbons, use a vegetable peeler. First, peel the cucumber and cut off the ends. Then, just keep cutting lengthwise with the vegetable peeler until you reach the seeds. If you don’t want to mess with that, you can just thinly slice the cucumbers.
- 10 Pecan halves – toasted
Mix all of the salad ingredients together. Measure out 1 orange container of the dressing and drizzle over the greens.
21 Day Fix Container count: 1.5 green, .5 purple, 1 blue and 1 orange
